The famous "Tarte Tatin"

This "tarte tatin" has a special history:
it has been created by mistake by Stéphanie Tatin,
the daughter of Jean Tatin, owner of an Hotel in Sologne, France.

Stéphanie's speciality was the apple pie, crusty and caramelized.
One day, in a rush, she put the pie upside down in the oven ...
and that's how the famous Tarte Tatin was created!

The Tropézienne

The Tropézienne is a marvellous accomplishment of the pastry art,
a speciality from south of France:

Alexandre Micka, has landed in Provence with the American Forces
and had opened a bakery on the town square of Saint Tropez.
From his native Poland he had brought a recipe of his grand mother's cream cake.
Amongst other things (Pizzas, Croissants etc) he sells the cream cake in his bakery.
This cream cake will become the famous "Tarte Tropézienne"
